A growing number of small producers are raising poultry on pasture, processing birds on-farm, and selling the meat directly to customers at the farm or at a farmer's market. Access to processing is a critical issue. This publication, developed by NCAT, covers small-scale processing, both on-farm and in small plants, and includes information on the types of processing, packaging, distribution, marketing, and waste management.
