researching an article

Greetings all,

I am a freelance writer being asked to write a short (800 wd) article
about organic food, from the health angle. I've eaten organic for years,
and am already aware of tons of reasons for doing so. Not to mention the
overwhelming amount of health information available, especially thanks
to the web.
I've been thinking hard about distilling all this info down to such a
short article. The assignment comes from a content syndicator, so I
don't yet know where it will appear. He'll sell it wherever he can, and
in all likelihood it'll appear on some very mainstream web sites read by
a lot of people who have no clue, food-wise, and probably not
lifestyle-wise in the broader sense either.
So I thought I'd toss something out to this extremely knowledgeable and
active group:
If you could say one thing (OK, or a couple of things) to an "average
Amrican" consumer with corporate supermarket eating habits, what would
it be?
