Corn Info

I have a couple of questions about corn that some of you may be able to
help me with. We slowly expand our farm operation as we get our new
projects worked into a smooth routine.

My next project is corn. I've gathered and am rebuilding a corn sheller
and cornmeal grinder this winter with the plan to grow our own corn for
cornmeal and some OP corn for eating and selling (no super-sweet for me,
thank you).

My questions are, where can I find a discussion of things like potential
protein levels for the varieties and which are best for meal. I've grown
Golden Bantam for fresh and really liked the flavor- slightly sweet with
a real strong corn taste- YUM! And I've read that some varieties have
tight husks which resist corn earworms- anyplace where this is
discussed. It seems that seed companies talk about everything but these
aspects.
