A Cornell researcher found heavy production of the acid resistant e coli
responsible for meat contamination that has been making consumers sick,
in the rumens of cows on a typical feedlot diet of concentrates, vs. no
such e coli in hay-fed cows, according to an NPR news report this
morning.
This discovery should fuel the fight against grain-fed meat production,
of ruminants especially, that has been shown unsustainable in so many
other ways. It's good to see a landgrant researcher with the courage to
do this sort of work.
Unfortunately the researcher found that feeding hay for a week removed
all the bad bugs, and so is covering himself with the industry by
claiming his discovery is not the the death-knell of the feedlot system.
