BACKGROUND INFORMATION
All across the country and the world, consumers are increasingly
buying organic food and wine - products grown by nurturing the land and
supporting nature's self-balancing mechanisms, instead of using toxic
pesticides. According to the Organic Trade Association (OTA), organic food
sales totalled $3.5 billion in 1996 and the market has been growing at
least 20% a year for the past seven years. People are choosing organics
for their health, for our shared environment - and often for the taste!
Many top chefs use organics for the delicious flavor that organics can
bring to their cooking.
