| With 35 acres under cultivation, Paul
grows a range of herbs, vegetables and fruit he sells through a
community-supported agriculture operation, at a farmers market in
nearby Providence and to local restaurants. He also markets eggs
from range-fed chickens, and offers a variety of value-added products
such as salsas, pesto, dressings, bread and pastries.
Paul and his wife, Liz, started with a roadside stand
to sell produce from their original garden-sized plot. Responding
to customers, they invested in a commercial, state-inspected kitchen.
Just as they experimented with what types of produce to grow and
how to grow it, the Pauls experimented with and adjusted their marketing.
By the late 1990s, the Pauls had developed a diverse marketing strategy
based on direct sales in the Providence area. Along the way, Paul
became a leader among area direct-market growers, serving as vice
president of the state chapter of the Northeast Organic Farmers
Association and a driving force behind farmers markets in the region.
